Abstract
A study was made of a group of 11 males and 13 females over the age of 70 living independently in their own homes. The aims of the study were to review methods available for the nutritional assessment of the elderly, to use selected techniques to measure the nutritional status of the group, and to evaluate the methods used. A study comprised a retrospective dietary history, duplicate diet analysis and (for a sub group) a weighed intake. Metabolic balance studies for nitrogen, calcium, magnesium and phosphate were carried out; anthropometric and biochemical tests were also made. The results of the dietary intake study showed that for most nutrients intakes were equal to or above the British or USA Recommended Dietary allowances. Intakes of energy were significantly below recommendations. Intakes of magnesium, copper, zinc, vitamins D and E, folate and biotin were below the USA recommendations. Blood levels generally were within the reference ranges for younger adults. Anthropometric measurements were below values found for younger adults, but similar to other groups of healthy elderly subjects. Balance studies showed that the group were in equilibrium for nitrogen, calcium, magnesium and phosphate. Intakes of non-starch polysaccharide and phytate had no significant effect on absorption of nitrogen, minerals and trace elements.
