Introduction
In this chapter, the project background is introduced. This includes the motivation for this research and how the paper can contribute to the broader field of study. The current food system is complex, and food hazards are happening more frequently than ever. Therefore, the first section introduces food quality and safety issues in the current food industry. This section presents the food industry reality with real-world examples. The second section describes the food supply chain and its importance to the food industry. The third part discusses the issue of traceability and its contribution to food quality and safety. The following section presents some current traceability innovations. Blockchain is introduced in the fifth section with lists of real-world application examples. The last section proposes the research questions and sets out the structure of the research.
